Our Gumbo follows tradition in that it consists primarily of a strongly-flavored, roux-based stock, smoked meats and shellfish, a we add a 100% gluten-free thickener along with what Louisianians call the "Holy Trinity" of vegetables, namely celery, bell peppers, and onions.
